Very disappointing. We ordered the historians sampler as an appetizer. It came out and was all completely cold. Our waitor did not take entre order until we had our appetizer and we were finished with the app for 30 minutes before the entree came out. We had to ask about our entrees and the waitor got defensive and just said "oh it's still cooking" then disappeared and returned with our food 2 minutes later...the entrees were cooked to the wrong temperature and not even close. My wife ordered medium well and received very med rare. No we did not send it back. We got a creme Brule because of a birthday and until the top crust it was complete liquid. The waitor just said "oh yeah its a little runny huh" and walked away. We frequent high end steak houses and had high hopes here, but it appears to just be a gimmicky tourist trap

Had dinner tonight. It was wonderful,
as was our waiter Alex. Completely redeemed themselves. Will be back soon! Thank you Scott and Holly.
The owner and GM reached out to us. We will be visiting again on 3/17/23. I will share our experience.
Well, it finally happened. Had a very disappointing dinner at The Fort. Have been going here at least once a year for twenty plus years. Spent almost $500 for party of four. Two in the party ordered the T-bone steak special that came out over cooked. Not surprised because the steaks were about half an inch thick. The vegetable was carrots, just carrots. Sorry to see this fine dining restaurant not be the treat it used to be.

We had a great time at the Fort this weekend. Let's start with the appetizers the roasted bison marrow-bones were Epic the Bison eggs were also very good should have had more. Guacamole was awesome along with top-notch chips. Moving onto the main course I had a 12 oz dry aged beef ribeye was seasoned and cooked perfectly my wife had the tenderloin which done to perfection. For a cocktail I tried something different, they call it trade whiskey which was flavored with tobacco and gunpowder, no foolin gotta try it. For dessert we had creme brulee which was very good, along with a nice Tawny port for a dessert wine.
What a great atmosphere this restaurant has.... the entire property just has a good vibe.
But you know what the icing on the cake was? Service. Our waiter Don, he was top-notch and really made us feel welcome. We also had a nice interlude with the assistant GM Chris at our table who checked up on us, now that's service!
We will be back guaranteed!!!!

The Fort is a unique bucket list dining establishment. The building is based on Old Bents Fort on the Santa Fe Trail. The food is Colorado style game, bison or more traditional proteins with Old West sides. Add in characters wandering the restaurant and speaking to folk and frequent Old west type festivals and you have a Colorado Legacy.

We've been going to the Fort for our anniversary and special occasions for over 20 years. The food and service have always been great, though a bit pricey.
During that time they have dropped some of my favorite items from their menu such as Fort campfire beans and their great lamb chops.
We still felt it was worth patronizing their restuareant until our last visit. We were charged a non trivial kitchen fee in addition to the items we ordered. A kitchen fee at a restaurant?! Isnt a kitchen a restaurant a necessity and not a service. Did we have the option to order our food uncooked? Next a table fee or a bathroom fee?
We'll not be back while they charge for using their own kitchen

We had a family of 12 – For a birthday celebration for my husband. Our reservation was for 6:30, by the time we were served dinner it was two plus hours later. Guest’s that came in after us were served their dessert and left. . . Every entree that was brought out was over cooked to a dry, unflavored taste! We all had doggy food for our fur babies who ate like Kings and Queens. 🤦🏻♀️
We made the best of our evening for the sake of my husband!
We will not be returning, EVER!
Disappointed customer,

Mother-in-law took me here for my birthday. It was absolutely wonderful, thank you!

First time here. We came on a Sunday night. Fairly busy, so it took around 2 hours with 4 people. The two kids' meals were tasty enough for picky eaters. The gonzales steak was very good. The fort game plate was a bit disappointing. The bison was chewy, and the quail was dry. The bison egg app was good, and the peanut butter jalapeños were a game changer. The waitress, Marissa, was lovely and friendly. Overall, I would be happy to go back, just may adjust my menu choice.

I went to the Fort on Saturday March 25th to take my girlfriend to dinner for her birthday and it was nothing short of amazing. The food was spectacular and the service was supreme. The manager Scott is an amazing man and knows the restaurant business from A to Z. Scott will make sure your experience is unforgettable. When you go to the restaurant ask for the server Lynn. Lynn has been at the Fort for 20 years and is a professional in the first degree of restaurant service. This restaurant is magnificent 😋

Insanely overpriced for cheap cuts of meat. Ends up being easily over $100 per person for a very very disappointing meal. For maybe ½ the price it would be written off as a “fun experience”. But no way I will be spending that much per person for food that is truly 5/10.
