A perfect bakery for Huntsville! With delicious food and scientific flair, the Bakingtist is a wonderful addition to the downtown food scene. Heidi treats each customer like family, and has some absolutely incredible baked goods. I personally love the breakfast faccocia bake with conecuh sausage (my two year old goes in for the monkey bread).

I was excited to try out this place given the glowing reviews, and I realize I'm swimming against the tide here, but sadly, I didn't love this place.
First, the service isn't friendly -- I'd say it was indifferent. Didn't really get a "hello", but just an expectant "what d'ya want??" look. Then there are no prices, and the staff doesn't know how much anything is, so it then comes kind of as a shock when 2 cookies and a monkeybread thing is over $17! And when they ring you up, they don't offer you a receipt so you're left hoping that you got charged the correct amount.
But I was willing to let all of that go if the baked goods themselves were awesome, but they weren't. The monkeybread was the biggest disappointment. Each of the little nuggets were hard, tough and stale tasting. We both only ate one piece and threw away the rest (even though it was so expensive).
As for the cookies, admittedly, they are quite heavy, so I guess that's why they charge so much for them. And they clearly do the "wait overnight after you make the cookie dough before baking" thing so that the cookies stay in a big mound when baked, but since there's all that dough, the inside ended up tasting underbaked but the outside was dry and crunchy.
Maybe it was just an off day, but I wouldn't recommend this place to others.

My husband went to The Bakingtist for the first time today. Everything was very good; the only issue was that the selection was limited, that's why the 4 stars.
Update: We have been to The Bakingtist several times now, and have enjoyed most everything we've tried, though LOVE the ham and gruyere croissants, pain au chocolate, cinnabombs, and cruffins. We try to get there early for the best selection. The only issue we have now is that we don't know what's on the menu each day so are relunctant to make the 35 minute trek, then scrounge for parking, because of it. We hope the staff at The Bakingtist will fix this and post daily what goodies are available. I expect most of their patrons would appreciate this, especially if this info was posted first thing in the morning. Aside from this, and on a practical level, it's just good marketing.

Incredible spot for coffee and pastries. The whole place is just an awesome vibe. Like your chemistry teacher brought goodies for the class. I can’t resist the Brioche Bombs!!! Also the fresh squeezed OJ is awesome.

All I can say is WOW!! The baked goods are so amazing! Went in on a Saturday and got their brioche monkey bread, connecuh sausage kolache, chocolate peanut butter cookie, sprinkles cookie, and chocolate chip cookie. The PB chocolate cookie was delicious (and I don’t even really care for PB), the chocolate chip had the perfect amount of chocolate, but the sprinkles cookie was my all time favorite! It was the perfect mix of crispy on the outside and soft on the inside. I told my husband he couldn’t eat that one because it was mine lol. Then we had the brioche monkey bread and heated that baby up for about 15 seconds (per employee recommendation) and it was so so good! I would have loved a bit more cinnamon, but I also just love a ton of spice flavor and realize not everyone else is as extreme as me. The kolache was so good as a quick breakfast or honestly if you’re just craving a kolache. Any time I need a sweet treat I will stop by here again and I wouldn’t regret it a single bit

What I had was okay - the chocolate croissant was a bit over cooked and nothing I tried knocked my socks off. With that being said, I did not get to try the things I usually go for because they were so picked over. I’ve been three times now all before or at 10am (they are open until 2 I believe) and the same situation. Not many vegetarian options either as far as savory treats. I want to like this place so bad but the selection is limited, especially if you don’t get there early!

Delicious treats!! The dine-in space is a bit cozy (especially on a Saturday morning), but the food is marvelous! And you've gotta watch the orange juice machine at work.
