Visited this gem of a spot in lovely Huntsville and was not disappointed! The space is so fun and takes you back to high school chemistry in the most positive of ways. And the treats will keep you coming back again and again! The blueberry muffins are massive and filled with berries. The monkey bread divine and cookies huge and delicious. Located in Huntsville’s iconic Times Building in the heart of downtown, visit the bakingist!

So many amazing baked goods!! Cookies are 🔥 , croissants are 🤌, and the jalapeño cheddar conechuh brioche 🤯. Different items it seems like everyday makes it exciting to go in, you never know what wonderful goodies they have for you that day.

We have fallen in love with the Bakingtist! Everything we’ve tried from the focaccia to the croissants to the HUGE cookies have been so delicious. The owner is such as sweet as her baked goods! The Bakingtist has rightfully earned a place in our breakfast date rotation 💜🤍

Croissants better than Paris! On one of our first times at The Bakingtist, I had a croissant. I had never had anything like it. It was light, flaky, had “crunch” and delicious flavor. I loved it. We had a trip to Paris scheduled and it made me look forward to it even more. Well, we just got back and my husband and I were so disappointed in the Parisian croissants. We tried several different patisseries—none of them were as flaky or delicious and NONE had the “crunch” from the layers of lamination that take 3 DAYS to make! So, if you are looking for a QUALITY bakery, this is your place!
We travelled half way around the globe to realize the best was in our backyard! WELL DONE THE BAKINGTIST!

I love The Bakingtist and I'm so glad that Heidi (the owner) was finally able to open her own brick and mortar. Located in part of the old Straight to Ale on Holmes, her new space is in a great location and has been revamped to look like part science lab, part classroom, and part bakery!
I love the concept. The Bakingtist is not just a bakery; it aims to spread a love and appreciation for science. The interior of the new shop is full of fun scientific references: little beakers as flower vases, famous faces in science, a periodic table of the elements but with the supporters who helped make opening possible. There's also a big window where you can look in to the kitchen and see Heidi and all the staff hard at work making delicious goodies! So cool!
For now, they are still settling into the groove. They offer coffee and fresh-squeezed OJ for drinks and a variety of pastries, some of them rotating based on availability. They're popular - they'd regularly sell out at markets and such - and that can still be the case here. They're obviously working hard to bring staff and product up to scale. Personally, I think it's worth it to be patient. When I visited at around 10:30 on Tuesday, they still had a pretty good selection of items available.
The young woman working the cash register and making coffee was lovely and eager to help everyone in line learn all about what they had to offer. I wound up with an apple hand pie and a chocolate chip pecan groundbreaker cookie, which is a special, super large (1/3 pound!!) cookie that, when heated up, turns as ooey gooey and perfect as if you'd just pulled it from the oven. I really wanted a blueberry muffin instead of a hand pie, but I think there was a miscommunication that I was mostly at fault for -- the staff member had just gotten done explaining the apple hand pie and I said, "Sounds good. (pause). I think I'll have one of those." I'd pointed to the blueberry muffins, directly next to the hand pie, but I think she thought I meant the hand pie. Whoops! Mistakes happen and that one was more on me than her. Just gives me a reason to come back again. ;)
At any rate, wound up not being mad about the apple hand pie at all because, like everything The Bakingtist makes, it was AMAZING. Butter in every bite of a perfect flaky crust, partly tart, partly sweet apples, great ratio of filling to crust. It was sooooo good, and a very ample size. The groundbreaker was just as delicious as the last flavor I tried back on a market day, and absolutely loaded with chocolate and pecans. I shared with my husband and he said he wished I'd gotten one for each of us bc neither of us actually wanted to share!
Extra bonus: the box my pastries were packaged in to go had a cute science themed joke written on it. Adorable touch!
Product is impeccable, staff are lovely, and for anyone who wonders at the price...just remember that Heidi is committed to paying ALL her staff at least $15/hr, which can be a pretty big lift for a new small business. Please let them take care of you by you taking care of them! You won't regret it. :)

I brought my mom to the bakery today, and we both loved it. We finally got to try the orange juice and it is to die for!! Customer service is fantastic, and the boy selling baked goods knows the ingredients on all pastries and gives great recommendations! Blueberry muffins are my newfound favorites.

Cute place, terrible name. Cookies are delicious but I wish the chocolate chip cookie was a little less cooked. Not all menu items available every day. They should work on that. The smoky sausage in a pastry was good and weird at the same time. Maybe an egg inside would be a good addition. It's fun to be able to watch the bakers work.

For reference, I have written only one other review ever - this bakery is a gem! As a scientist, I love the creative theme and the work of periodic art! I felt so welcomed by the staff and owner. Had a perfectly moist blueberry muffin, packed with berries and the real treat, a hefty classic chocolate chip cookie. Wish I was a local to enjoy this small business on a frequent basis!

This place is great! The interior has such a fun and cool design. I didn’t order any coffee but I did get the “Cinner” cookie and it’s FANTASTIC! 10/10 would recommend. Will definitely be coming back. Thank you!
