Another great discovery in my adopted town of Trinidad,CO and the first big town like food trailer I've found around here.
Only this one is more than just a food truck, it's two trucks, a converted filling station that's an indoor dining room, an outdoor wood burning Pizza oven and outdoor covered seating area.
By the way, they serve the best variety of gourmet pizza in the area. Great place 👌

This is the cutest down-to-earth place with the best pizza I’ve eaten in a very long time. We happened upon this place after a long day of driving and nothing else open. So glad it’s where we landed. Food truck coffee and pizza in a cosy courtyard, family-owned and operated. Our only disappointment? That we only ordered one pizza and not two. I adore places like this. Good food in an original setting. Bravo!

So glad we've got this as an alternative to Dominos and Pizza Hut.
Good, chewy crust and you can tell they source their toppings with care because of the flavor. I've tried four of their signature pies and would eat any one of them again.
Not a cheap pie, but I've spent the same amount of money at other places in town and not even wanted to finish what I ordered.
Give these nice people a try.

Driving through from Austin Texas. Really wanted a beer after a long drive but unfortunately they don’t get their beer license until next week which was a bummer. BUT this pizza was so quick and delicious that it TOTALLY made up for it. 100% The Mighty Miner pie was awesome! Definitely try it. Gonna be totally rad when they have some beer too!

Delicious brick oven pizza! Trendy outdoor pizza setting with a large variety of pizzas and Italian ices, sodas, coffee, etc. setting in and around an old gas station, with inside & outside tables & chairs. The pizza is very good & flavorful and the service is quick, cheerful, & helpful. They also do takeout. I highly recommend!

Best pizza in town, possibly in all of southern Colorado. Unless you're looking for a completely different style of pie AND willing to drive to Colorado Springs or Denver, this is the place to go. Their calzone and white pie, made with quality ricotta, are top notch. Great views from outdoor seating.

BOMB = Brick Oven Made Best ...Pizza
This hidden gem on the side of Old Santa Fe Trail Road outside Trinidad is truly unique. Modified shipping containers house the order, pay, and drink stand next to the kitchen container with the brick oven. Covered outdoor patio tables are in front of an old gas station with another table set up inside the station's garage. Funky but effective.
When we went the place was being run by two people; the older male owner/cashier/promoter, and his youngish female sidekick cashier/chef/waitperson. They both were delightful.
Although everything is made to order it is quick. That is because the pizza is cooked at 800 degrees Napoli brick oven style. Mostly Italian, as in from Italy, ingredients are being used. (ask the owner for the details) We ordered a pizza made with cheese, fresh mushrooms, truffle oil, and garlic. Because of some of the pictures I was afraid that the crust would be burned but it was not. The pizza was delicious. We drank a real, original, Vernor's ginger ale soda with it. What a treat.
Our friends ordered a different pizza that they said was also delicious.
We went on Sunday just as they opened at Noon. For fifteen minutes no one else came. But 45 minutes after that 30 more people had arrived. If it is not already, this place is going to be popular.
I had to knock it down a notch because the Port-A-Potty was gross. But, the next time that we are in Trinidad we will be back. The pizza was that good.

Scott (the owner) was incredibly hospitable and so kind to our kiddos. We tried 3 pies tonight -- the margarita, a build your own, and "the out of towner." Everything was excellent, from the quality ingredients to the perfectly wood fired crust. They also made some awesome Italian sodas. We will definitely be back next time we're in Trinidad!
