The dosaquiles are sooooo good! Must try! Great new spot to eat in Boulder. Everything we tried was fresh, creative, and yummy. Loved the curry spiced hollandaise on the benedict. Also lots of pickles, hot sauces, and other local products to pick up as souvenirs!

You cannot miss this beautiful and vibrant colored food truck right of highway 12.
They've got the most delightful dirty chai.. a lovely (mango) lassi.. the most wonderful waffle sandwich. Seriously, the pickled garnishes on top of the eggs and sausage sandwich between a waffle that's fresh is fabulous.
They also have GF options as well as veg options so it's great for all!
You can also pick up some jams, some sauces and some pickled items to take home with you. They also sell pottery made by locals as well as soaps.
The folks running the truck are so kind. They have a lovely setup. Everything is super clean. Very cute! The vibe is just so marvelous and so exciting to see in the middle of the desert.
Absolutely worth the stop! This is what makes Boulder so marvelous!!!

Absolutely fantastic. I lived a summer in Boulder and this amazing food was not there. It was what Boulder needed. I know that Hell's Backbone Grill & Farm dominate the attraction to this beautiful area, but Wild Indigo brings a flair and passion for food that reminiscent of a downtown location of a major city. The flavors make you feel somehow both at home and in India. The owner and operator is just the sweetest, the cooks and staff are the nicest and most professional. I cannot recommend this place enough.
Look, things in Boulder are expensive, but this place is worth more than every penny spent. I cannot recommend this place more than Google allows. 12/5. This is truly a safe haven for food and flavor in the middle of absolutely nowhere and I want everyone I know to try it.

As my husband puts it, “best breakfast I’ve ever had which is saying something… because I’ve had a lot of breakfasts.” The flavors were AMAZING, everything was so tasty I wish we could have come back for lunch. Very cute food truck would recommend checking it out if passing through the area!

Great vibe. Delicious waffles and coffee. The rose chai waffle was perfection. They also make amazing jam that’s sold at the store next door. Highly recommend!!!

I have had the mango lassi and cardamom waffle and both were perfection. I really appreciated that the food here has fun flavors and spices to enjoy instead of just grease or sugar like most food trucks.
The staff always seems to be enjoying themselves, and it shows in the food.
