This is a new mom-and-pop pizzeria that focuses on homemade, from scratch, wood-fired cuisine similar to what you’d find in southern Italy.
Yes, it is totally amazing.
There is absolutely nothing like it in Crossville. In fact, the only other place I could compare it to, out of all the pizzas I’ve ever had, is a single, Italian, wood-fired pizzeria located in New Haven, Connecticut—which all the locals raved about (and for good reason).
Nicolette’s is better.
It’s also more authentic.
This is “purist” pizza. The simple toppings make it easier to respect the craft put into each ingredient. The crust, in particular, is simply fantastic.
A couple cautions, though.
The restaurant is small and has very limited (intimate) seating. Parties of over 4 will be difficult to seat comfortably, and I believe the restaurant seating capacity is limited to 12 (if I heard the owner correctly).
However, if you’re bringing a date or a significant other, the restaurant has a fantastic atmosphere for that.
If you’re a foodie, EVERYTHING is on display: dough-working, prepping, oven-tending, firing, plating, etc. Enjoy!
I suspect this will soon become a place where reservations are a must to get in.
The place has only been open for about a month, and the staff are (understandably) still getting their “sea legs,” but I already see this restaurant as becoming one of the better fine-dining experiences in town—and pulling in people from neighboring areas.
I’ll definitely, definitely, definitely be back.

This is a cozy little cafe that serves pizza cooked in a wood oven. There is a limited menu that rotates occasionally. They also have a limited amount of dough which is imported from italy so when they sell out, they are done for the day so come early. We ordered the marinara pizza which has sauce and roasted tomatoes. The ingredients are fresh and the dough is light and crispy. We also had the loose-leaf jasmine tea which was fantastic. They have a good variety of teas and coffee options available. We will definitely be back. The owners are really nice and personable. They take pride in their craft and it shows in the pizza.

Enjoyed the food and the atmosphere. You pretty much have to be in the mood for pizza and nothing else. The quality was fantastic. You also can’t be in a hurry and don’t expect coke or any mainstream sodas. If you like authentic pizza I recommend it. I had the Filetto my wife had the Bianca and we finished with canolli.

My favourite place to eat in Crossville. Amazing AUTHENTIC Italian pizza. A truly FAMILY run endeavor which gives it a very personal feel. Don't forget to order cannoli for dessert and the BEST cappuccino. This place is not designed for dine and dash, but rather as a space to enjoy the art of food and time spent with dear people. Don't be in a rush here, it ain't pizza hut, thank goodness!

Absolutely wonderful, pizza and drinks were amazing. The family who runs it are very sweet and hospitable. Little busy but with how excellent everything was I'm not surprised. If you get the chance eat here you won't be disappointed

Nicoletta’s offers wonderful Neapolitan pizza, delicious Italian coffee and delightful cannolis. The atmosphere and customer service was amazing. It is fantastic to have such an authentic offering in Crossville.

This is not your regular restaurant. It's not the kind of place you can just walk in and be seated. It's not the kind of place where you'll get your food 10-15 minutes after ordering. Do not walk in ready to eat immediately. Do not come on your lunch break or in a hurry. If you can't handle that, do not go. Stop reading and take your impatience elsewhere. You'll be looking at 2.5 to 3 hours from being put on the wait list to leaving happy. This place is an experience. It's art. The atmosphere is so relaxed. The family is so welcoming. On a 5 star rating scale, I'd give them at least 7 stars. I waited 1 hour before I was seated. I waited another hour before I received my pizza. My phone was nearly dead by the time I was seated, so I decided to sit back, sip my soda and water, and watch the whole process. In that time, every person working there stopped to talk with me and check on me. I watched the chef (I'm sorry I can't remember the official title forgive me!) address each diner while he made the pizzas. He kept us updated on where he was with orders. He remembered returning customers and recognized that I was new. He remembered a customer's preference of no parmesan even though it wasn't on the ticket. He took time on each pizza from start to finish. Making sure the dough was laid out perfectly. Applying toppings evenly so no matter how you cut your pizza you'd end up with the same ingredient ratio. No matter how many orders stacked up, he made sure each pizza was perfect before being sent out. You can't rush art. The pizza itself was so good. I got the Elena Ferrante. Not too crisp, not too doughy, it was just right. The meatballs were spectacular. The ricotta he put on was just the right amount. The mozzarella was so fresh and flavorful. The basil was fresh. The orange soda was to die for! Honestly, for the quality of service and food, they should charge twice what they do. This is a passion for them. Not just a source of income. If you take just a moment to watch, that is so obvious. Honestly it was so touching seeing how much everyone cared about making my experience perfect from start to finish. It broke my heart seeing them having to turn people away because they were at max capacity. So many were understanding, but there were some that were nasty about it. Attitudes like that are why Crossville doesn't have more places like Nicoletta's. Walking in, I was bummed that there was no carry out. If you pay attention, you'll see there is no way right now. It would honestly be a crime to sacrifice quality so they could crank out more food. If you want to try this amazing experience, call ahead to be put on a wait list. Be patient with them. They are truly doing the best they can. I promise you it will be worth the wait. I can't wait to go back myself.

So happy to finally have good pizza here in Crossville. This is a family run restaurant specializing in true Neapolitan pizza. The atmosphere is very charming and the owners are just wonderful human beings. You can really tell that the pizza chef loves what he does as the pizza was fantastic. After my first visit they made a life long customer out of me.

Owners are great friendly people serving authentic Italian pizza. Even the cappuccino and espresso is authentic. Very enjoyable visit. Hours are limited as they get started, but worth it. Very much recommend.
