Cafe Belay Coffee Roasters

I had the good fortune to meet Spencer and visit Cafe Belay on the grand opening of the shop. The space is just right, spotlessly clean, and Spencer was friendly and accommodating. I enjoyed an excellent breakfast burrito and some one-of-a-kind homemade chai (in a latte) that was great.

There are several fine coffee shops in Canon City. Cafe Belay is different for two reasons. First, sustainability, in terms of business practices and ethics, is the foundation for what Spencer is doing. These are deeply held values for him, and Cafe Belay is an expression of these values. Second, Cafe Belay sells rock climbing gear, which I haven't seen in other coffee shops. Given that our region has outstanding rock climbing opportunities, this is a natural pairing.

There is a community table, a low game-playing table, and room to sit alone. I'm looking forward to returning more than once and encourage you to check it out.

This place is an absolute must if you’re in town. If you like coffee, climbing, or just supporting local businesses you HAVE to stop into Cafe Belay.

One of the most impressive things is that the beans are roasted in house, but it gets better! The syrup, Kombucha, the bread and burritos are all done in house as well. The quality really must be tasted to truly appreciate all the love that Spencer puts into his craft.

The atmosphere is wonderful and the place is immaculately clean.

I would highly recommend the Shelf Roast and the Vanilla Latte.

Finally! EXCELLENT quality coffee in Cañon!! This guy knows how to roast some coffee beans (and yes, he roasts them himself!!) — the coffee is so dang smooth it had me re-evaluating my morning life decisions! He used a super thick and creamy oat milk for my vegan cafe latte and holy deliciousness, it was the best cafe latte I’ve had in years! Amazing vegan, blueberry muffins! He let us taste-test his homemade kambucha as well, and it tastes super smooth and flavorful. He uses the best high-quality ingredients, including organic when he can, that gives his food and beverages that high-end bougie taste we’ve all been dying for in Cañon!!! I’m kind-of way too excited about this place!

We've heard good things about this little place and finally got the chance to stop in! My husband ordered the cortado and I ordered the Americano. Both are(I'm still drinking mine) very smooth with no bitterness. The pumpkin bread (was 🤤)so moist and dense with chia seeds. Who knew chia seeds and pumpkin bread would be so good together. I'm excited to have a coffee shop nearby, next time we'll have to try the Chai.

Stopped in for the first time today, we ordered a lavender latte, it was so smooth and delicious and a smoothie that tasted like a gelato. Service was excellent and the environment was very welcoming. Highly recommend

Stopped by for a light breakfast and coffee after sky diving and I'm so happy I randomly picked this place. Super small on the inside but extremely inviting and cozy. Got a pour over with lavender and a breakfast burrito. I had questions about what you can do with pour-overs and the nice gentleman working was more than happy to answer all of my questions. The breakfast burrito was not just a normal dinky burrito you would normally get, it was full of fresh ingredients and bursting with flavor.

Will definitely make this my go-to stop if I'm in the Canon City area!

All I have to say is HOMEMADE SYRUPS!

Best latte of my whole roadtrip!! Silky smooth steamed milk and a creamy espresso pull - no bitterness!! The lavender syrup was so so good.

I love to support small businesses and this is the best kind. I have been buying my coffee beans for home here (so good), but I never miss the opportunity to get a hot cup, too. Spencer is a true artist and is very involved in the roasting and brewing process to make sure the coffee is top quality... but somehow the price is still reasonable. It's so neat how they also have a selection of rock climbing equipment, so you could replace a piece of gear without messing up your weekend plans!

Fantastic coffee, the chai latte (made from scratch in house) was amazing. Very cozy atmosphere, plus a small Black Diamond gear shop for all the last-minute needs of Shelf climbers (chalk, headlamp, ropes, pretty much everything but shoes). Also, one of the few places in Cañon City to get the Shelf Road Rock guidebook. Highly recommended for a quick bite if you're in the city.
