Living in Boulder and coming to Beaver Creek often we've had the chance to visit The Metropolitan more than a few times and with consistency I can say the place is sub par. It sells itself as a tapas restaurant. It is not. Having spent time in Spain I would trade the worse tapas bar in Madrid for this place. The menu is limited and has little to do with tapas. The other night we did try the batatas braves and they were under cooked--so much so we had to ask for them to be heated more, only to have someone in the back come out to tell us, we needed to change our order because any more cooking would burn them. We also had sashito peppers which is rarely found in Spain and they were also undercooked and had to be sent back. Their wine selection only has one maybe two Spanish selections, and they are cheap and tasteless at best. I would give the sommelier a 2 out of 10 for the quality he brings to the restaurant. The big kicker is that for a $24 cheese and ham plate they serve crostini. Have you ever tried to eat a quality cheese on a crostini? It literally crumbles all over the place and they don't have any substitute. Net, net. It is a shame this place even has tapas anywhere in its marketing. That's a lie. Then everything else is really downhill. I hope that it goes out of business soon so something better can take root and a quality experience to Beaver Creek.
Food Republic
This new wine bar features a self-serve enomatic wine dispenser loaded with 16 savvy selections, including stuff like Opus One. Chef Mike Bickelhaupt serves easy-going comfort food—pulled pork tacos, awesome Colorado lamb albondigas, addictive homemade potato chips with blue cheese mornay and an incredible charcuterie plate—to match the chill, laid-back vibe.

Excellent service! We had the deviled eggs, winter beet salad, and margarita flatbread. All were delicious. Would definitely go back.

This place changed to a different restaurant concept, yet they never bothered to update opentable or google maps - still accepting reservations for a restaurant/menu/name which no longer exists. Even their own website makes no indication of the change, though we undertand it has the same owners. Very inconsiderate of the owners.

Tried to go twice, because their website and their Google maps pages both indicated they were open. They were closed both times. “Open daily from 3-10pm with happy hour from 3-5.”
