Unbelievably patient and helpful plus great coffee.
DAMN GOOD COFFEE!!!! My wife and I visited Paonia back in 2021, and I can't STOP buying their coffee. Rubicon has two NEW roasts which are my now favorites, Guatemala dark roast and Sumatra dark roast. Originally, their Guatemala medium roast is what turned me! So if you like a really good medium roast, definitely go with the Guatemala medium roast. The Guatemala dark roast is earthy and rich flavor, it's got that extra kick flavor I like with breakfast foods. The Sumatra dark roast, I've had other Sumatra before, this one blows the others out of the waters! Their Sumatra dark roast is creamy, bold but has a medium roast kick at the end, super interesting. HIGHLY RECOMMEND ordering some smaller bags to try out, it will be worth it. Oh, I have a grinder so I buy whole beans and grind it every morning, the best.

Great shop, was super friendly, knowledgeable , and helpful in picking a roast and had a wonderful cup of coffee for us while we chose! Great attention to detail, a roast for every pallet, great customer service in a small family run business to boot! A must stop for the coffee aficionado or anyone who enjoys brewing a good cup of coffee!
Excellent coffee, have tried a variety of blends. Have introduced friends and family to Rubicon as well. Met the roaster/chef on a 2019 trip to Paonia and have had their coffee in my home ever since. Have never had a shipping or delivery issue either.

How often do you get the chance to get coffee that was roasted just an hour before you buy it? I really love the Lambhorn Blend, and every time I come to Paonia I always try to stick up on 2-4 pounds to bring home. Big shout out to Jay - he's a very pleasant person and a knowledgeable roaster. Looking forward to my morning coffees now that I'm restocked!

Jay owns this local establishment and roasts wonderful coffee beans. I love alot if deep flavor in my coffee but don't like an acidic taste so he recommended the Mexican beans. They brew a delicious cup of coffee. Be sure to support the local businesses here in Paonia so they can stay open and provide quality products for the valley! Thanks Jay!
