Great selection of light roasts. Skilled barrister. Good food. Almond milk. Only one single origin for testing
They use to have Oatly oat milk but now it’s Minor Figures (not good at all, does not foam) If you order decaf be prepared it will taste sour, not sure how other places get it right but this one has sour notes which I do not like. My husband had iced caramel latte and it was lacking flavor. My teen however enjoyed his iced chocolate. Let’s talk gluten free pastries. Was super excited so we got banana bread & Samoan donut. What a disappointment! They Both taste like chuck, flavorless and dry. You can actually make gluten free taste really good and this is not it for us. None of us liked it. Almond croissant was ok and best thing was lemon curd cronut. It’s sad we spend $55 on all this and threw away a bunch of food. This place will not be in our revisit lists sadly, we had high hopes. I know yo in guys can do much better, you have so much potential. Best wishes

Hot oat milk matcha baffled these baristas two different visits A) matcha b) hot water c) oat milk. Just 3 ingredients, all of which they have, they just need to go into a cup. the first time I requested a hot oat milk matcha, I get matcha, COLD water and steamed oat milk. The second time I ordered a hot oat milk matcha, shes talking about ice (?) Ice? and I just couldn't. I left. This is an item that's ON THE MENU and she couldn't or wouldn't grasp the concept. Bring your brain cell to work was neither of the days I visited this unfortunate coffee shop. Too bad the staff is so dense or it would be a nice place to be in this small town.
This is the fifth time I’ve come to theory and the coffee leaks because of the new lids. Just switch back to the old lids pretty please

If you just want a cup of coffee to maintain caffeine levels in your bloodstream, Theory may not be the place for you. BUT if you want an exceptional cup and fun atmosphere check it out! Maple Latte is my favorite!
We recently visited Theory Coffee Roasters in Redding and it was an absolutely fantastic experience. As soon as we walked in, the staff was incredibly friendly and welcoming, making me feel right at home. The atmosphere was cozy and inviting, with a great energy that made it a perfect spot to grab a quick bite. We ordered the breakfast sandwich and it was super yummy. The bread was perfectly toasted and had a wonderful crunch, while the egg was cooked to perfection and the cheese was melted just right. The bacon was crispy and flavorful, and the aioli spread brought everything together perfectly. It was a truly delicious breakfast sandwich that hit the spot just right. But the real star of the show was the espresso. It was rich, smooth, and had a deep flavor that was a true delight to sip on. The baristas clearly know their stuff, and the attention to detail really shone through in the finished product. All in all, I would highly recommend Theory Coffee Roasters to anyone in Redding or passing through. The friendly atmosphere, amazing breakfast sandwich, and exceptional espresso all make for a truly wonderful experience.

Great coffee and delicious Gluten free waffles. This completed my trip to Shasta Area :-) I wish to see places like this in Southern California!
My theory in regards to this place is that they serve great coffee and the ambience is nice, mellow, and welcoming. Go and prove it true for yourself. 🙂
It’s a nice place but they don’t have soy and the have a small size for the big price. I have to be carful when drinking regular milk. Oat milk makes me loose my appetite and almond milk I’m allergic to tree nuts. So for me I won’t be back. If they ever actually start carrying soy milk as an option I would give it another go.

Stopped in here on the way to Oregon and had a cappuccino and was not disappointed. Great product and service- lots of space to sit and chill - clean restrooms. 10/10 would come again. Pastries looked delicious but it was too close to dinner to try them.
Holy. Moly. Don't miss out on this spot. Especially if you're gluten free!!! We had their gluten free cinnamon roll, banana bread, and Samoa donut. All were absolutely wonderful and didn't even resemble GF. I got their summer lovin latte that was bomb and my hubs got their tonic coffee which was funky and different!
