Coffee is a consumable like food, yes, but I know you will understand what I mean when I say that coffee's got a different thing going on when it's compared to the other items that fall into the "food" category.
It's kind of strange, the coffee scene, it's a lot like the art scene. There are lots of art snobs out there but those coffee snobs are a different breed and they'll get you if they can. Funny thing is the value of art and the hot art is like the flavor of the month and art critics are the ones that make it happen. Sad. Some guy says this is the best this year so everybody just takes his word for it whether it's good or not? So goes the coffee industry.
I hope you try this process, why not try it over at K's coffee where I had these revelations in the first place? You'll get a delicious cup made by somebody who has learned their technique well, and loves what they do!
I believe an espresso (better yet an almond breve) made by a person who has perfected their craft, can produce something so exquisite that you remember it clearly, 5 years down the road. A mechanical espresso maker complete with stream pressure adjustment knobs, a "real" espresso maker, can send you to the hospital if you don't know how to use it. Skill and training required before you know how to use it.
An experienced barista and a badass, old school espresso machine are the original inspiration, repeatedly copied and poorly imitated by the entire coffee industry that we know today, including pumpkin spice lattes. I say imitated, never replicated. If it's not broke, don't fix it right? When I taste that cup of coffee, the difference between a fantastic cup and a cup I won't remember tomorrow is immediately apparent.
Espresso made using a brand new 2021 year-model, internet connected, smartphone app controlled, machine complete with FaceTime app, 24 megapixel webcam and touch screen is missing something vital: its soul.
Seems like a lot of coffee snobs are flavor of the week types. Their insecurity requires them to act this way in an attempt to make people think they are better.
When they loudly talk about that cat-poop coffee they spent $75 on at this "more bohemian" coffee shop, in this "better city" they mean to fill you with reverence for them.

(after all, it is irrefutable proof of their high status in society and if you don't think coffee that traveled through a cats digestive system and was passed in the jungle sounds good, you're obviously not cool enough to understand{I tell you what, somebody got the ultimate burn on them when they actually got them to believe they'd be cool if they drank coffee made with cat poop!})

I just appreciate a small moment of beauty, a quiet contemplation. The discovery of a creative expression, in the streaming breve I hold in my hands, a gift from the barista to me. I don't want to disrespect them by overlooking that. It's a priceless ability that allows one to appreciate such small, seemingly mundane things because if you can be so thankful for what many considered to be nothing, then everything becomes so much better.
I know that was a novel but when I sipped the almond breve that I got at K's, I was just thinking to myself, "this is top notch, this is so good why would anybody want to try so hard to say one coffee is better then another when the biggest difference to me is the skill of the person who made it? It doesn't really get much better." That's what I was thinking as I sipped that delicious drink at least. That was 3 weeks ago and I can still taste it, if I wasn't 40 minutes away from there I would be on my way right now.

We are visiting from out of town. Great cold brew coffee! Been here twice already and will probably be back the next two mornings as well! Nice, open space to sit down and enjoy, or work, if needed.
