Signature Organic Coffee

I love signature.
The drinks are consistent, always made perfectly using only high quality ingredients. They serve 5 different blends of drip coffee(hot+iced), hot chocolate, matcha, chai, and Yerba mate. NO ESPRESSO. Milk alternatives are available, as well as coffee ice cubes. They are usually stocked with a few quick bite options including scones, croissants and some other snacks. There is also a fridge with miscellaneous decaf cold drinks.
I come here weekly to grab my coffee beans for home. The beans are all roasted in house. Almost all of the blends offered are organic or fair trade. It’s nice that they offer an extensive list of single origin beans, plus there are always a coulple limited edition farms featured.

I have been buying five pound bags of "Black Thunder" beans for several years. It is consistently the best cup of coffee on the globe! Everything else tastes like muddy water compared to it. I never allow myself to run out of this coffee.

I love the coffee here, my favorite is the sumatra, both brewed at the shop and the roast beans by the lb. This business is a great Humboldt county institution. The service at the counter was prompt and cheerful, the girl making coffee was knowledgeable and competent. I like how the roasting apparatus is openly displayed so i can see the actual roasting process. Neat.

The barista, Tasha, was very kind and helpful! 😊 Also, this place has the best blueberry scones I've ever tried! The drip coffee is also quite delicious. 👍🏼🙂

Had the ham and cheese and chocolate croissants, as well as the blueberry scone, with a piping hot cuppa coffee. Was the perfect start to a cold fall day driving through the Redwoods! You guys rock!

Wonderful little shop! If you need to use a card there is a $10 minimum. They're always friendly and it's great for a quick coffee.

The roast their own coffee. Their employee are wonderful. Oh when you order iced coffee they use coffee ice cubes. Whaaaat, so it never gets watered down? Huge plus during hot summer days.
