Located inside the new Wise Wonders you will find Ebon Coffee Collective. I have been here twice while waiting to pick up my kids from karate class and each time I have the privilege of chatting with the baristas while they prepare my drink. I tend to judge a shop based on their cortados, and boy oh boy, they have made the best I have had in Billings. The Brazilian Coffee that Will used was insanely good this time (last visit was a Kenyan coffee, also fantastic). As we chatted about coffee, I decided to grab a bag of beans that they offer from Revel Roasters here in Billings. I mentioned it was my first time getting this particular variety and Will got excited. Why? They had just got a new batch of Natural processed Costa Rican coffee and offered to make me a pour over. Even though I love espresso, I prefer filter coffee so I accepted. Sadly, I had to leave before I could tell him my thoughts. Juicy, sweet, notes of pecan, and dried cherries. It was amazing. I highly recommend Ebon Coffee Collective! Go in during the evening hours to see Will, he is a phenomenal person and barista

Will is TOP NOTCH at his job!!! He has become one of my favorites to visit with while the kids are playing at Wise Wonders. The cappuccino and maple 🍁 🍂 latte are amazing!!!

Went for the first time last week. Even though there were kids at the play area the vibe was still nice over at Ebon Coffee side. Got a honey Cinnamon Latte with Oat Milk and a Brown Sugar Cold Brew with Oatmilk along with breakfast burritos. The best coffee so far in town.

Really, really good coffee, with great attention to choosing roasters and origins that went into making one of the most delicious and definitely non-generic tasting lattes I’ve had in a long time. I live in NYC and have the opportunity to go to a lot of very good coffee shops and after having a couple of cups here I can confidently say this would be a “go-to” shop if it were in my neighborhood.
The owner is really invested in choosing quality beans and we had a lovely conversation about what he was brewing when I was there.
If you like small coffee shops that put a personal touch and personal care into their drinks then this is a great place to go.

Me and my three friends stopped by Ebon briefly on our road trip, and we’re all very impressed. Erin served us and was so kind and friendly and genuinely invested in serving us. The drinks were 10/10, and they have several coffee and non-coffee options. The milk was steamed perfectly. I ordered the rose lemonade which was delicious 😋. Definitely would recommend Ebony coffee to anyone local or traveling.

I had the espresso and milk latte and two slices of toast. Atmosphere was comfortable. Barista was nice. Oh… the prices were a lot better than I thought it would be too.

I have too much social anxiety for the entryway it shares with wise wonders and the gaggle of children that swirled around me while I was ordering and browsing Saturday morning.
However, I imagine it would be a wonderful place to go on a slow weekday

A charming little place with a really friendly proprietor. I ordered the milk chai, and I am pleased to say it was perfectly made. No steeping over or under, and just the right amount of milk and sugar. I had a waffle too that was massive and delicious. I couldn't finish it but I sincerely regretted it.

This is my favorite coffee shop to go to. It's made a million times better by barista Will. I'm always hoping Will is on shift when I go to Ebon, because Will is the type of person who knows your name and what you last talked about. Go to Ebon!!!
